These Christmas Tree Truffle Baubles are sure to be a hit with all guests! 

Chocolate Truffle Baubles

One nice visual touch I’ve created for festive parties that I’ve catered for is bringing a small good quality fake Christmas tree decorated with homemade chocolate truffles hung on the tree like baubles.

You can then circulate this at the end of the night, which is guaranteed to make your guests feel like you’ve gone the extra mile.

To make 30 chocolate truffle baubles:

220g of good dark chocolate

100 ml of double cream

drop of orange essense or 35ml of brandy

In a small pan warm the cream. Don’t allow it to boil but you do need to make sure it’s piping hot. Break your chocolate into chunks into a bowl and pour the hot cream over the chocolate. Using a spatulata, fold this together gently until all the chocolate has melted.  Finally add your orange or brandy and fold it through. Allow the mix to cool for 40 minutes and then, wearing some food gloves, use a tea spoon to spoon dollops and roll them into ball. Place them down on greaseproof paper in turn. Once you have rolled them all, dust them with cocoa and place into a fridge to set. When you want to decorate your tree with them place a small toothpick in each (you can colour the the toothpicks with something food friendly) and then using little bulldog clips, clip each one to the tree.
